Binary package hint: openoffice.org
Ubuntu 8.04 - Hardy Heron
When i change appearance in theme and i choose a color black for my window ,in Open office icons become a words but too when i choose a dark color.

Does installing openoffice. org-style- hicontrast resolve the problem for you? I think this is an issue that the color causes OpenOffice.org to go into hicontrast mode automatically for a11y reasons.
