wvdial should be automatically be in jaunty. It is up and working on my laptop. You don't really need gnome-ppp ( I don't actually have it installed).
Next time it happens, try and see if you have wvdial installed by typing in the terminal:
sudo apt-get instal wvdial
One question: was your installation a clean one or did you upgrade from previous version of Ubuntu?
