Plymouthd started crashing again for me a few days ago, on Ubuntu Gnome 16.04, after getting fixed with a reconfigure ... I have now run it again, and it seemed to have fixed it. The error hasn't returned:
$ sudo dpkg-reconfigure Plymouth
update-initramfs: deferring update (trigger activated)
