All this situation is, at the least, a bit demotivating... months have passed by and the bug is still here...
Today I've downloaded the first public beta of Lucid Lynx and after live booting the cd I've been welcomed at the desktop, with my delight, by exactly the same issue: setting my sound device to 5.1 speaker configuration lead to rattling sound issue from speaker.
After that I've decided to do the only logic thing I've should had done many months ago, that is completely remove Pulseaudio and come back to use ALSA instead.
Now my audio is good again, i've no more problem configuring my 5.1 speaker system and another couple of PA bugs are also gone with it.
I'm very sad about this situation...
I really can't catch how... how Ubuntu think itself as a viable alternative to commercial OS, I can't catch how Canonical hopes to play a reliable role in the market place with situation like this going on over months and release...
I do really hope things could change, but I'm afraid it's more than likely the next Ubuntu LTS will be out with this issue still affecting the system and goes on.
