In fact, "dkms status" returned nothing as you expected, so I tried removing linux-modules-iwlwifi and that did the trick. It looks like I had this package installed from a previous Ubuntu release and it was being preserved during the upgrade.
@David Roche: try removing the linux-modules-iwlwifi package.
If removing the package works for David, then I suggest that this bug be closed, or instead refocused on the linux-modules-iwlwifi module, which no longer seems compatible with "Intel Wi-Fi 6 AX201".
