This is an intentional change made in GNOME/glib. They no longer use gconf, but record your personal preferences in ~/.local/share/applications/mimeapps.list.
gnome-open just asks glib what to launch now.
Use the preferred app selection dialog (gnome-default-applications-properties) to change the default.
