Something else worth noting:
When I go to
system-settings -> details -> default applications
and change 'web' to 'Firefox Web Browser' instead of 'Chrome'
then the Chrome option disappears...

I can only set Chromium default again by closing all Chromium windows and restarting it.
It will then ask to be default again.
