I don't think including a link at the very bottom of the email would be problematic at all, and is standard practice on a lot of mass mailing applications.
It would probably also be useful to fix the backend to actually handle the unsubs. Anything with unsubscribe in the subject line or as a word on it's own at the top of a message should result in a 'do you really want to unsubscribe' type message to the submitter, and it the potential unsubscribe not being passed onto the bug subscribers.
