I think there isn't any documentation. But just a common sense as UX.

For example LibreOffice / Word use Ctrl+z as undo and Ctrl+Shift+z (some times even Ctrl+y, but is not the case here) as redo.

Pcbnew use:
n -> set small grid
<Shift> + n -> set big grid
r -> rotate the footprint counterclockwise (positive graph math rotation notation)
<Shift> + r -> rotate the footprint clockwise (negative graph math rotation notation)

I think, part of this came from the understanding (by some users) that "N" make some opposite or related function with the shortkey "n". Following this (in my opinion) is better the default shortkeys:
w -> increase track width
<Shift> + w -> decrease track width
