Can you replace "foomatic-rip-hplip" with "foomatic-rip" in the PPD. PPD can be found in /etc/cups/ppd directory.

As for the communication problem:
It looks like the printer queue is using the hostname. Is it possible to try using the IP address instead?

sudo hp-setup

Select manually discovery, then enter the IP address, etc.

If that fixes it I'll need to do some testing using the hostname rather than the IP and see if there might be some issue.
