I managed to fix the problem by editing /etc/cups/ppd/Officejet_Pro_8500_A910.ppd
Changing:
*UIConstraints: *Duplex *OptionDuplex False
*UIConstraints: *OptionDuplex False *Duplex
on line 36 to
*UIConstraints: *Duplex *OptionDuplex True
*UIConstraints: *OptionDuplex True *Duplex
gave me the two-sided options I was missing in the dialog.
