I bet that GL is nicking video RAM from Xv.
What's the output of "xvinfo | grep max" on your system? Which video card are you using? What resolution/depth are you running at (xdpyinfo output)?
On my system, using the maximum values from xvinfo to run: gst-launch-0.10 videotestsrc ! video/x-raw-yuv,width=<width>,height=<height> ! xvimagesink
shows the same problem.
