OK ... I needed to:

Go To “System Settings” - “System Info” - “Graphics”: Turn “Forced Fallback Mode” to “OFF”

REBOOT → LOG IN TO ‘GNOME’ (Nb: The “Gnome-shell desktop” option no longer exists)

Now I'm back in Gnome Shell graphical mode :)
