There are easy to handle bootloaders other than GRUB2 around that we need to take care of during an update. Under no circumstance these should be overwritten thus making automatic installation procedures difficult. The upgrade as it is now is very comfortable in this respect.

However for a long-term solution I vote for Erick's idea #3, i.e. leaving Grub where it is during an update. This may need two different operation modes of the installer, one for updates only, and one for fresh installs (or repair).
