I'll do some testing. I'm not 100% sure the mysqlx.sock error is fatal. The server log seems to end with a successful startup.

From terminal:

mysqld is running as pid 21763
Error: Unable to shut down server with process id 21763
dpkg: error processing package mysql-server-8.0 (--configure):
 installed mysql-server-8.0 package post-installation script subprocess returned error exit status 1
