Try selecting the "recovery option" from the GRUB boot loader and see if you can get to a console from there. If you have ssh already you can also run the command from there. Otherwise, maybe you can boot a live CD, mount your HDD partition from there and then modify the startup scripts (unfortunately I'm not sure exactly what needs to be modified to get your machine to boot into either a terminal or VESA x.org). Note that Ubuntu does not use "init" so inittab is probably not affecting this situation (ubuntu uses "upstart" instead).
