For comparison, I tried booting a Fedora 9 live CD in all 3 systems I mentioned above (the Dell server, the gBox with an S3 display controller, and the Averatec laptop with an S3 display controller.

I was unable to complete booting the 2 systems with S3 controllers - the system hung completely after a couple of minutes or less.

I was able to boot the Dell system, which came up in the low-res 600x800
mode, as was the case with the LTS Ubuntu system. I was able to use the xorg.conf file from the Ubuntu 7.04 system, as above; I did remove all but the sections for the display. This system does not normally use xorg.conf - the configuration is entirely different from the Debian/Ubuntu config. - but this did override the default systems, and I was able to restart X (ctrl-alt-BS) and get into 1024x768 mode, the most this Samsung monitor will support.

Possibly this information will be useful for upstream developers.
