I'm reporting that Maarten's PulseAudio patch as installed from https://launchpad.net/~ubuntu-wine/+archive/ppa cures my Guild Wars audio problem.

[ Ubuntu 11.10 or 12.04 amd64, Wine 1.4 or 1.5, Creative Labs SupremeFX X-Fi ]

Without Maarten's patch my Guild Wars audio stops abruptly (and stays off) after a few seconds to a few minutes. With Maarten's patch, Guild Wars audio through PulseAudio works just fine.
