So, I was digging more into this and it appears not to be a hardware problem. People are reporting similar issues and how monitor is sometimes working and sometimes not.
Anyway, I also found a workaround for this. When I set my monitor to 30Hz refresh rate this problem disappears.
I have a Dell P271Q and in the settings menu there's a 'Display' option. Setting MST to Primary will lock the refresh rate to 30Hz and it will also put the monitor into 'Multi Stream Transport' mode.
Having my screen on 30Hz is a downside, but frankly I didn't notice the difference.
