I'm experiencing the same problem. If I have an adhoc folder that has previously been marked for synchronization, it can't be unselected (or the UI doesn't reflect the state change).

1. Observe that the folder has the Ubuntu One emblem
2. Right-click on folder and select Ubuntu One > Stop Synchronizing This Folder
3. Observe that the folder still has the Ubunut One emblem
4. Right-click on folder and observe that Ubunut One > Stop Synchronizing This Folder is still an option

If I restart my computer (or logout and login again), then the emblem goes away and the folder appears to stop synchronizing. So perhaps the UI just isn't getting updated.
