Even after I did it right there were problems so I went to Fedora, and also had problems. Dont think the distros are ready for *booting* from USB sticks yet....

You're right that this is an awkward UI. This is basically part of the
cluster of problems that I'm tracking as bug 90575, so I'll mark it as a
duplicate of that. Somebody else there suggested using a drop-down for
the possible devices.
