Thanks for getting back to me. I have never heard of gnome-remote-desktop before. Installing it cures the issue that I've been having.

Yes, I meant the minimal install from ubiquity.

I would consider this lack of knowledge on my part but I will update the threads on askubuntu and reddit with the solution as I'm sure others will encounter the same.
