The gconfaudiosink and gconfvideosink appear to be gone, they used to be in /usr/lib/gstreamer-0.10/libgstgconfelements.so, which is part of gstreamer0.10-plugins-good.
However they seem to have been deprecated in favor of gsettingsvideosink and gsettingsaudiosink, which are in a shared library called libgstgsettingselements.so, which is currently part of gstreamer0.10-plugins-bad.
Thus, two things are needed:
1- Installing the gsettings elements somehow, currently by installing gstreamer0.10-plugins-bad.
2- Modifying applications that refer to gconf{video,audio}sink to use gsettings{video,audio}sink instead.
I couldn't find any relevant bugs in either of gstreamer0.10-plugins-{good,bad}. But still, point 2 above means that most likely some changes will be needed in totem itself.
