The implementation is identical between SeaMonkey and Thunderbird. If there is no server#-specific setting mail.server.id#.use_condstore then mail.server.default.use_condstore is used. Thus, setting mail.server.default.use_condstore to false should disable it for all configured IMAP servers unless specific preference settings for that server override it.
