I've used the MarkoNo5's tip, all was OK. I've just upgraded tex* packages today and the hyphenation doesn't work at all.

I found this solution :
00tetex.cnf --> 10tetex.cnf (rename, find it in /etc/texmf/language.d/)
sudo update-language
sudo fmtutil-sys --all

It's now OK.

The fix supposes user didn't do anything before ?
