what you need is to "pin" the packages to the wanted version. Run 'man apt_preferences' to learn how to. Here's my /etc/apt/preferences file:

Package: sun-java6-bin sun-java6-doc sun-java6-jdk sun-java6-jre sun-java6-source
Pin: version 6-03-0ubuntu2
Pin-Priority: 1001
