Actually, I just installed roundcube-mysql, and dbconfig asked me what type of database to use. Either it didn't ask me before, or I missed it during configuration. So, if that's the case, then perhaps this is actually a dbconfig issue in that it should be smart enough to only show db types that are actually supported by the installing package.
