After the update to lucid beta2 vga16fb was set per default. (nvidia driver 195.36.15)
But vga16fb only support low resolutions with 16 colors.
So, I switched over to uvesafb.
My kernel start line looks like this:
linux /vmlinuz-2.6.32-21-generic root=UUID=xxxx-xxx-xxxxx ro video=uvesafb:mode_option=1280x1024-32 quiet splash
Now I see the splash screen with the fix from the second comment.
The default ubuntu splash screen is boring - so I installed the "solar" theme, but every-time plymouth is updated the solar theme is replaced my the default ubuntu theme.
(I hope that the solar splash screen stays when I removed the default ubuntu splash screen package.)
