Thank you for taking the time to report this bug and helping to make Ubuntu better. The relevant dpkg terminal log says:

sed: can't read /usr/share/plymouth/themes/ubuntu-text/ubuntu-text.plymouth: No such file or directory
E: /usr/share/initramfs-tools/hooks/plymouth failed with return 2.

Re-assigning to plymouth which ships /usr/share/initramfs-tools/hooks/plymouth.
