After a little more testing I can pin it down to the preinstalled /etc/alsa/conf.d/99-pulse.conf being the culprit. Removing this, leaving everything else preinstalled in place and adding the files for Pipewire (50-pipewire.conf and 99-pipewire-default.conf) is enough to get it working properly.
