Thank for all your help. So today, I had a bit of time and I tried to install OpenOffice 2.0.3 which is in dapper-proposed.
The problem is that I cannot install it. It want to suppress my french local, and fail with this error:
E: /var/cache/apt/archives/openoffice.org-impress_2.0.3-6dapper2_i386.deb: trying to overwrite `/usr/lib/openoffice/share/registry/modules/org/openoffice/TypeDetection/Filter/fcfg_impressgraphics_filters.xcu', which is also in package openoffice.org-common

:( After that, my OpenOffice was broken (some packages had been updated, some not)
It took me a bit of time before I manage set back everything to normal.

So before I mess it up again, can I install the OpenOffice 2.0.4 rc1 which is intended for Edgy on a Dapper installation?
