So I was able to get back into a functioning state.
I booted back into the 4.4.0-31-generic kernel, re-installed the nouveau driver via Additional Drivers
Rebooted and chose the 4.4.0-45-generic kernel
Re-install the nvidia 367.57 drivers via Additional Drivers
However, something here seems to clunky if one has to do that to get the drivers to work. Whether that's nvidia related or otherwise.
