ARGH!!!
Just rebooting to test again, and now DHCP isn't starting properly.
I switched the wireless from WEP to WPA, not sure if that's related or not.
Anyway, "sudo /etc/init.d/networking restart" after booting brings up DHCP and NTP just fine.
