What make you think that it don't recognize UUID entry in fstab?
The version currently in feisty repo should recognize UUID=* entry.
(but not /dev/disk/by-*, LABEL= ... stuff)

That's true that this version don't use UUID for new NTFS device, but
i'm not sure that this require a stable release update.

If ntfs-config will still be needed in next ubuntu release, it will handle that
just right.
