I am really new about Ubuntu. I have solved my problem today, it was a simple fix. It is working in all my machines (1 Ubuntu 8.04 server, 3 Ubuntu 8.04, 1 Ubuntu 7.10 and a Laptop 8.04). All of them finally working. This what I did:
I realized that right clicking on the NM applet on the notification area and choosing "network information" I was having a different one from the one I had stated in "/etc/network/interfaces" in order to address nfs in clients fstab. The IP displayed was not the one on interfaces.
So I configured "Static configuration" (by clicking on network-managet icon in notification area and choosing "Static configuration..."), after unblocking it, etc, etc., then clicked on "Connections" tab and then on "Wired connection" and then clicked on "Properties" button; entered static IP, netmask, gateway and clicked on "OK" button.
Then Rebooted and my connections were back.
For my case it seems that NM was not reading "/etc/network/interfaces" since I had configured client's "fstab" to mount based on my so "static" IP.
