Are you sure the DHCP is passed through to your VM? NetworkManager would normally setup a DHCP connection for you – if available.

IMHO there is something wrong with the network setup on your host about passing through the DHCP.
With your updated netplan config you specify a static network configuration (no DHCP), which is apparently working.
