During the install of phpmyadmin you should have been asked a few question. I take it you opted to use dbconfig-common to configure your database settings? Do you remember the answers you gave and the responses you got?
Also, the last respons I can see in the attached DpkgTerminalLog.txt looks like a failed attempt to install/setup a MySQL-server? Was that something you did before the apt-get install phpmyadmin?
