Hello folks. I experience this issue with my three monitor setup (two of which are vertical) using NVIDIA Drivers 440.82 on PopOS 20.04.
Monitor layout works with xrandr/arandr and if I hand craft manitors.xml, configuration is preserved. I have posted my details here https://github.com/pop-os/pop/issues/933#issuecomment-643681670

But GUI doesn't work.
Also after recovering from suspend layout explodes again.

I would be glad to help with investigation, collecting logs, traces, etc (feel free to DM me).
