Doing some more testing and a bit of research on this and unfortunately I found some answers to this.
It seems that there are a number of issues with performing dd to /dev/mapper files >= 1G. The result appears to basically be a kernel hang, also noted in some of the information I came across is horrid performance.
This aligns with the issues described including the terrible performance/time it can take for the delete when things don't hang. I'll have to think a bit about the best solution here.
