You are indeed supposed to see "ATI Technologies" reported by fglrxinfo and glxinfo. The "DRI R300 Project" that you're seeing may indicate you are somehow still loading the open source ATI driver, since that is what I see reported by glxinfo, and I am only using xserver-xorg-video-ati, not fglrx or xserver-xgl. Did you just uninstall the fglrx/xserver-xgl packages, or did you purge them too?
