So further information, but more confusing to me.
If I mount via 'sshfs user@host:/path/ mountpoint' then edit the file with vim, I have no problems with permission/ownership resets.
If I mount via 'alt+f2 ssh://user@host'
then travel to path/ and edit the file, I see the permission problem.
