Exactly same behaviour for me when editing a "alt" tag .. gedit process consumes all CPU, eventually freezing the whole gnome session, just mouse moves and crtl+alt+backspace allows to restart the session .. once the session is re-opened, I have to kill the CPU-consuming gedit process
