Thank you so much for your detailed steps, I was encountering the same problem and was able to fix it based on your info.

An encrypted boot partition seems like an important thing to have. Since grub supports such a thing, it only seems logical that grub would be able to detect an encrypted partition and automatically insert the correct configuration into the EFI grub.cfg file. Am I crazy?
