I haven't seen anyone report this on a fresh install. It is always after an upgrade, which normally replaces both parts of grub on the disk. The symbol "grub_term_highlight_color" was removed from the new version of grub intentionally. When only one part of grub is upgraded, the other, older part generates this error because it is still looking for it and can't find it, because the part that used to contain it was upgraded.
