Atm there is no option to add a shortcut to launch a random program from system
> preferences > keyboard shortcuts

The only way that it's possible to do this at the moment is gconf editor, which
is not the most user-friendly way of doing this.

I suggest adding a heading applications to the keybindings list, but leave the
application to be launched empty, have the user be able to select it out of a
list much like the "open with other application" option in nautilus.
This would have to be done in such a way that once the user set up one
keybinding, the program would add it to the list, and leave one blank list entry
available, so the user can easily set another.
