Notably I've now bypassed the gfxboot by installing Ubuntu on another computer to yet another USB stick (that is, two USB sticks attached to the computer) and using this install target USB as the boot device on my Chromebook.

gfxboot is only used when starting Ubuntu installation media in legacy mode, so a ready install does work.
