You can edit the displays file (.gdesklets/displays) and delete the line for the infodomestics bar by hand.
Please be aware that any errors in there might make your gDesklets profile(s) unusable!

I really don't want to be annoying or bossy, BUT:
this is a question and not a bug in gDesklets. Please use the answers section if you are searching for help and not reporting a bug.
