I decided to do a memory test by booting Ubuntu with the shift-key held down and selecting memtest and surprisingly there's some bad memory around the end of the 32GB (there's 4x8GB sticks installed). Booting with the kernel parameter mem=24000M seems to get the system back to stability.
I guess the update may have used the memory space differently or maybe the memory just all of a sudden went bad.
