When it come to Google Talk, telepathy-gabble seems to be the problem.
At Gnome's bugzilla the bug is marked "Status: RESOLVED" and "Resolution: NOTGNOME" for Empathy.

XMPP has many, many different ways to become invisible. The subset that telepathy-gabble supports does not include the one used by Google Talk. So MC/Empathy/something falls back to busy."
