OK, a complete workaround (takes me from "can't connect and can't display") that works for me is to install the Debian packages and edit /usr/share/applications/screensavers/electricsheep.desktop (thanks Eero!) so that the "Exec" line reads:
Exec=electricsheep --root 0 --video-driver xv
Without changing the video driver, the sheep are not displayed in fullscreen. I'm not sure if that keeps the original aspect ratio, though.
